About me
Growing up, I spent many summers visiting my grandparents, who dedicated over three decades to the restaurant industry. What began as a humble taco truck grew into a thriving restaurant and catering business. I often helped run the taco truck, but my most cherished memories were working alongside my grandparents during catering events. I assisted my grandmother (Rosalina Villa) in preparing rice, beans, and fresh toppings, while also helping my grandfather (Alfonso Villa) prep meats and organize the cooking cart for service. Witnessing the joy our food brought to clients and guests and seeing their reactions to our show-stopper-the glistening pork from my grandpa's trompo al pastor spinning on a vertical rotisserie-was unforgettable. These experiences gave me a deep appreciation for cooking, as well as for the personal connections created through food. As the summer came to an end each year, I left inspired to pursue my own culinary path, driven by a passion to preserve my grandparents' traditions. Today, I aim to honor their legacy-not just by perfecting their recipes, but by ensuring the spirit of their hard work and love for food lives on in everything i create.
